Preparing the Crust

Let’s talk about the crust for these cheesecake bars — it’s the foundation that holds everything together and gives you that satisfying crunch! Made from buttery graham crackers and a hint of sugar, this crust is not only delicious but also perfectly complements the creamy filling. It’s sweet, slightly salty, and just the right amount of crumbly to create that delightful contrast in every bite.

Ingredients

  • Graham cracker crumbs (1 ½ cups)
  • Granulated sugar (⅓ cup)
  • Unsalted butter, melted (½ cup)
  • Salt (¼ teaspoon)
  • Cinnamon (½ teaspoon)
  • Vanilla extract (1 teaspoon)

Instructions

  1. (Total cook time: about 15 minutes): Preheat your oven to 350°F (175°C). This step is crucial to ensure your crust sets just right.
  2. In a medium mixing bowl, combine the graham cracker crumbs, sugar, salt, and cinnamon. Stir them together until well mixed. The aroma will start to remind you of your favorite dessert!
  3. Pour in the melted butter and vanilla extract. Mix everything together until the crumbs are evenly coated and resemble wet sand.
  4. Press the crumb mixture firmly into the bottom of a 9×13 inch pan. Use the back of a measuring cup or your hands to make sure it’s packed tightly — this will help it hold together when you cut the bars later.
  5. Bake in the preheated oven for about 10 minutes, or until the edges are golden brown. Keep an eye on it — you want it toasted, not burnt!
  6. Once done, remove from the oven and let it cool slightly before adding your cheesecake filling. This cooling step is important to keep the filling from melting into the warm crust.
